Happy summer everyone!  It officially turned summer on Friday, Whoo hoo! The kids and I have settled into a routine and I have to say that this has been one of my favorite summer’s thus far. I think it’s because the kids are older and not in that many camps, so we’re just together a lot and we’re really enjoying each other’s company. Zoe is keeping busy by babysitting regularly and she’s having a blast and gaining some independence. She really adores kids, (she’s sort of a Pied Piper) so babysitting is a natural for her. A lot of the kids she babysits are Eli’s friends and siblings so Eli likes tagging along on her job, sneaky kid.

Father’s day was a blast. John’s request was that we go on a family bike ride, so we got on our bikes and biked into Sausalito for lunch. We went to Fish for some seafood tacos.  It was great to see how much the kids have improved on their bikes.  There were some pretty big hills to climb and they went up them with ease.  Next family bike ride is up to the top of Mt. Tam.  We will take it slow and pack a picnic lunch and make it an all day event, but the kids are ready and eager to try the climb! I’m excited because I finally get some mountain biking buddies!

Friday was summer solstice and John wanted to celebrate by watching the sunset, so he took us up on Mt. Tam after dinner to watch the sunset over the Pacific.  It was gorgeous and the weather was just perfect.  It was a great way to spend summer solstice and get connected with Mother Earth. Watching the sunset on and standing on Mt. Tam made me so grateful for this beautiful earth that we get to live on and enjoy everyday.  There’s really nothing prettier than Mother Earth.  She’s a magnificent painting that changes every second.

There wasn’t a lot of creative cooking going on this past week, so I really don’t have any new food photos to show you. I did make a delicious carrot, ginger and miso salad dressing that I will be posting soon, but noting else too exciting.  It was a week of cooking old favorites and just chilling out. It was basically my week of summer.

Ok, so let’s move onto this week’s menu.

Sunday night dinner

Thai style chicken burgers and carrot, ginger miso dressing served over romaine and butter lettuce with sliced cucumber, heirloom tomatoes. We’re eating out on the deck tonight!

Monday night dinner

Paul McCartney’s refried bean tacos and lacinato kale salad.  It looks like it might rain today, which is totally weird for California at the end of June, but ok, so I’m cooking up something easy and tasty for meatless Monday.

Pasta with walnut pesto, sausage and broccolini.  It still looks like it’s going to be a bit cool tonight, so pasta it is. We love this pasta and I especially love the walnut pesto. I have to say it’s one of my favorite pestos. It has such flavor from the toasted walnuts that it doesn’t need or require any cheese.  This is an easy weeknight one-bowl pasta.

Wednesday night dinner

I’m going to try these black bean veggie burgers and serve the up with some kale and ricotta salata salad. I hope the kids like them.  I have made them before for myself for lunch, but this is the first time that I’m trying them out on the family. Fingers crossed.

One-pan pasta.  Yep, pasta again this week, but we love pasta, and I need leftovers for Eli’s lunch, as he’s at camp this week. Pasta is an easy leftover to serve up for lunch.

I’ve cooked all week and it’s summer, so we’ll be eating out tonight!  I’m thinking we might bike over to Larkspur for dinner.

  3. not only do i wish we lived closer 1. to meet 2. so i could sit at your counter and stare at your beautiful kitchen and eat your food and now 3. to have zoe babysit…my gosh what an adorable picture. I am so bummed to have missed out on the summer solstice…my hubby told me earlier that day and i ended up going to bed sooo early that night…love your photos. i’ve been having a hard time really cooking…it is just so darn nice out that i don’t want to come inside and cook…i mean i am still cooking but not the 4-5 days per week like before. I need to try your one pot pasta i keeping oogling over it. have a great week!

    1. Ok, you’re totally cracking me up girl, especially the comment about sitting at my counter, staring at my kitchen and eating my food. I’ve been cooking, but definitely not as much as during the school year. I cheat and take off a night or two when we’re out having fun.
