Minty Limeade

Move over Bootleg, Mint Julep and Mojito, here come’s Marin Mama’s minty limeade, a perfect drink for the whole family on a hot summer day. Lately the kids and I have been enjoying limeades. Whenever we go to Sol Food, we all have to split their enormous limeade. We call it their virgin Mojito, it’s just so tasty and has a bit of a kick to it. When my hubby tried it, it reminded him of a drink he grew up in Minnesota, called a Bootleg.

We tried to recreate the taste of these refreshing summertime drinks for our backyard barbeques. We threw together some limes, frozen lemonade and fresh mint leaves and created a mix that brought together the flavors we were looking for. All we needed now was a catchy name. Zoe took a sip and said it should be called, minty limeade.  We all agreed that it was the perfect name, simple and sweet. Go Zoe!

This mix is super easy to throw together and can literally be made in 5 minutes. It’s the perfect addition for any barbecue or summer dinner. You can even add some alcohol and make it into more of an adult drink if you like. This mix is best day one and tastes great day two, but may not look as vibrant in color because you’re using fresh mint to make this, and it can discolor a bit. The leftover mix can be stored in the refrigerator in a glass jar with a lid, just be sure to give it a good shake before you use it. To tell you the truth, our mix never lasts past day 2.

minty limeade:

makes 12-ounces of limeade mix – feel free to cut the below recipe in half if you don’t want or don’t think that you will use up 12-ounces of mix in 2 days

  • 1 container (12-ounces) frozen lemonade concentrate 
  • 1/4 cup (2 limes) freshly squeezed lime juice
  • 1/2 cup loosely packed mint leaves (approximately 20 leaves)
  • sparkling water or club soda
  • ice cubes

Wash up your mint leaves and juice up your 1/4 cup lime juice.

Get out your blender and add in the frozen lemonade concentrate, mint leaves and lime juice.

Turn on the blender and blend away until the mixture is smooth. It will turn into a beautiful shade of green.

I always pour my mix into a glass jar with a lid to store in the fridge, it just makes it easier for making the drinks and for storing the leftovers. Whenever you want to make a fresh glass, all you need to do is give the mix a good shake.

Ok, now that we have assembled the mix, let’s make up the drinks!

Get out an 8-ounce glass and fill it with ice cubes, add 2 tablespoons of the limeade mix and then pour in the sparkling water to fill the glass. Give the drink a stir and a taste, and if you want it sweeter, then add a bit more concentrate. We found that 2 tablespoons was perfect, not too sweet and not too weak.  If you’re using a larger glass you’ll want to add more of the mix.

Pop in a straw and garnish with a fresh mint leaf.  The concentrate has a tendency to sink to the bottom as it sits, so make sure to give it a stir with your straw or a spoon every so often.

          1. Ok- I just made it and I really like it!!!! My family thought that it needed to be sweeter so I put the mixture back in the blender and added a little organic sugar and blended it again. That helped (for them). I’m sure that the lemonade concentrates matter also. I used Trader Joe’s and I noticed that you used Minute Maid. I may try that next time. Either way- there will for sure be a next time!!!! (Even if I make a separate- less sweet batch for me ;o) Thanks for a great refreshing drink! XO

            1. Hey Kathy! I’m so happy to hear that you made the minty limeade and that it was tasty to a no-soda kind of gal! Minute maid might be a bit sweeter, so give that a try next time. This drink is sweet, but not over the top sweet, which is what I like. I sometimes put a bit more than 2 tablespoons of the mixture in the kid’s glass so it’s a bit sweeter for them.
