Marin Mama's weekly dinner menu - April 7th

Ok, I know I’m a day late here, but I took the weekend off from the blog and got out and played, as it was so gorgeous out! It’s totally ice cream eating weather, as you can see from the above photo of Eli and his buddy Isaac, and ice cream eating weather makes me crave the great outdoors, not being indoors plugging away on the computer.  So, because I was a slacker and played rather than worked this past weekend, this post is going to be short and sweet.  I’m going to dive right into the weekly menu, so you can all get started on your meal prep.  So here’s what I’m attempting to make up this week…

Monday night dinner

Green bean and shallot ravioli, crispy garlic bread and chocolate Oreo ice cream.  This is an easy peasy meatless Monday dinner that the kids absolutely LOVE, and the best part is that it takes no time to make, making it the perfect weeknight meal.  I actually use broccoli rabe in lieu of the green beans all of the time, and I will be doing that tonight!  Oh, I did do a bit of cooking over the weekend.  I made up some chocolate Oreo ice cream for the kiddos as a treat since the weather has been so nice. The kids are super excited to chow down on that after dinner!

Tuesday night dinner

Buttermilk roasted chicken, lacinato kale salad and popovers.  This is yet another easy weeknight dinner.  I’m going to marinate the chicken Monday night and cook it up after work, as it only takes about 30 minutes to roast up.  The popovers literally take 35 minutes to whip up and bake away.  I’ll make the kale salad up while the popovers and chicken are cooking.  I always have my kale washed and ready to go, so this is a no brainer easy meal that the kids devour!

Wednesday night dinner

Cheesy baked tortellini and broccoli rabe sautéed with shallots.  My kids love and devour this pasta and I love it because its super simple to make up and it’s a two-nighter meal, bonus.  By the way, I never make up the homemade marina sauce anymore, so don’t feel like you have to make at all.  The jarred stuff is perfect for this meal!  You can even make the pasta up ahead of time, refrigerate it and then bake it off after work.  The pasta really comes together in under 20 minutes and then takes exactly 30 minutes to bake, so I usually just make this up after work.  As you can see, we are huge fans of broccoli rabe, and when it’s sautéed with shallots, my kids devour it.  I will post that recipe soon.

Thursday night dinner

Leftover night!  Eli has a baseball game tonight, so it’s leftover night at the Grandy house. We’re having the leftover cheesy baked tortellini and some cut up carrots and red pepper.  I love leftover nights!

Friday night dinner

TGIF!  Favorite turkey burgers with cilantro-lime mayonnaise, roasted asparagus and Robert’s absolute best brownies.  These are our favorite turkey burgers, hence the name favorite turkey burgers.  Seriously, these burgers get devoured by my kids and their friends.  Top them off with the cilantro-lime mayonnaise and you have yourself one killer burger. It’s Friday so why not bake some brownies up as well, right?  My kids love these super fudgey brownies.  Serioulsy they are the bomb, so give them a try!
