Isn’t Eli such a cutie?  I love this picture of him posing with his new favorite yogurt drink, Slingshot!  Slingshot is actually a local product made and developed here in the Bay Area, which I think is pretty cool. The drink is pretty genius in fact, as there’s a little packet of goodies wrapped around the bottle that contains toasted oats, almond bits, chia seeds, honey and sunflower oil.  Eli thinks that the packet is the coolest thing and loves opening it and pouring into his yogurt.  This drink is packed with fiber, protein, live and active probiotics and Omega 3 fatty acids, so it’s a win win for any kid or adult in fact.  Anyway, I thought I would give a shout out to Slingshot because they’re a local company, and because Eli is such a huge fan!

So, I know this post is a week and a day late, (Marin mama has been slacking) but it’s summer, so I sort of took a mini summer blogging and cooking vacation, but I’m back, and I’m fired up to get cooking and blogging again!

Ok, lets move onto this week’s menu, as it’s loaded with some easy weeknight summer recipes.

Monday night dinner

Spaghetti with cheesy broiled tomatoes and basil, mixed greens with creamy mustard vinaigrette.  My kids LOVE this pasta because it literally tastes like pizza. I take heirloom tomatoes and top them with some olive oil, a bit of shredded parmesan and mozzarella and then stick them under the broiler till the cheese melts and gets all crispy and brown.  The tomatoes get super soft, cheesy and crispy.  We then top them on some angel hair pasta or spaghetti and it’s like eating a pizza!  This is a super easy weeknight and kid approved dinner!

Tuesday night dinner

Leftover night!  You all know how much I love leftovers!  We’re having leftovers of last night’s pasta. I’ll just slice up a fresh tomato or two and some fresh greens, and I’m good to go.  I’m also going to add some garlic bread to them menu, just to carb things up a bit!

Wednesday night dinner

Pesto-yogurt roasted chicken drumsticks and Israeli couscous salad.   This chicken is great because you can make it the night before or in the morning, and then let it marinate all day. I adore this couscous salad and it’s super easy to whip up on the fly!

Thursday night dinner

Leftover night!  We’re going to have leftovers of the pesto-yogurt chicken and couscous salad. I’m going to pair the dinner with one of our favorite kale salads though.  I mean come on, did you think I would go a week without a kale salad in the weekly menu rotation?

Favorite turkey burgers topped with cilantro-lime mayonnaise, kale salad with ricotta salata and frozen s-mores.  We’re headed over to my friend Yvonne’s house for dinner tonight, so I’m bringing one of our favorite summer-time dinners!  These burgers are the best and if you haven’t tried them yet, you have to! They’re a family and friend favorite!

    1. Hey girl! Check out thier website, as they have all of their locations lsited there. Whole Foods does carry them, so hopefully there’s one that carries the drink in your area. 🙂

    Those turkey burgers are so good on sandwich size English muffins and pretty amazing on top of a lush salad. LOVE the cilantro lime mayo. Putting that on lime grilled chicken breasts as well.
