Minty Limeade

Move over Bootleg, Mint Julep and Mojito, here come’s Marin Mama’s minty limeade, a perfect drink for the whole family on a hot summer day. Lately the kids and I have been enjoying limeades. Whenever we go to Sol Food, we all have to split their enormous limeade. We call it their virgin Mojito, it’s just so tasty and has a bit of a kick to it. When my hubby tried it, it reminded him of a drink he grew up in Minnesota, called a Bootleg.

I’m sure you’ve all seen the cover for the July/August edition of Martha Stewart Living in either a book store or your grocery store. If you’ve seen it, then you know why I just had to run out and make up this bread. I opened up my mailbox last week and saw the cover showcasing this beautiful assortment of heirloom tomatoes on top of this toasted bread. I immediately went to the grocery store, bought me some heirlooms and made this up for lunch. I have to say that I was in food heaven. This bread is crunchy on the outside but soft on the inside from the juicy heirlooms and olive oil. The crunchy sea salt and fresh basil just give it another punch of flavor and texture. John and I split half a loaf up for lunch one day and paired it with my lacinato kale salad and drumsticks another night for dinner. I also brought this to a friend’s house and served it up as an appetizer. Let’s just say it was a hit with everyone. It’s truly the perfect summer bruschetta!

Here’s another juice that I’m currently loving that you can make without a juicer. Yaay! I love that I can juice at home without requiring the use of an expensive juicer. It just makes me happy. I have 2 other juices on the blog that you can make without a juicer as well, my mean green juice and my carrot, grapefruit and ginger juice. They all taste great and each one of them has a special kick to it from the ginger. I made this juice up one afternoon and Zoe and John looked at it and decided to call it vamp juice, because it sort of looks like blood, but don’t worry, it doesn’t taste like blood.

4th of July is around the corner and it’s time to fire up the grill. Here’s a great burger recipe that celebrates the American West. This is a lean mean tasty burger. I say lean because buffalo has 70 to 90% less fat compared to beef, and 50% less cholesterol. Buffalo is also leaner than both pork and chicken, and has fewer calories to boot. On top of that, buffalo is higher in protein, iron and all the omega and amino acids. We’ve been fans of buffalo meat for years, going back to the mid 90’s when we were introduced to our first buffalo burger at Joe’s Garage in Minneapolis. You can pick up buffalo pretty much at any grocery store or Whole Foods. Because buffalo is high in protein, it’s also very filling, so 1-pound is perfect for a family of 4. We serve these burgers up on mini brioche buns and they’re the perfect size.

Here’s the perfect summer s’more for those hot summer nights. These s’mores are a twist from the traditional s’mores because the chocolate is on the outside and they’re frozen. Yes, they’re frozen, am I tempting you yet? The best part is that they can be made year round, as they are cooked under a broiler instead of roasted over a campfire. So for those of you that don’t have a backyard fire pit, you’re in luck.
