avocado toast 2 ways

My main focus on this blog is to inspire you all to get in the kitchen and cook for yourselves more. I want to take the intimidation away from making breakfast, lunch or dinner, by showing you simple whole food recipes that you can whip up on a moments notice, but recipes that taste like you ordered them from your favorite cafe. Good food doesn’t have to be labor intensive, or complicated to taste good. Some recipes, like this avocado toast, are so simple and easy that it feels strange to even write a recipe for them. Avocado toast is the BOMB, and one of the simplest and tastiest ways to dress up a slice of toast. I mean it’s literally …

WAIT, before you scratch your head and wonder to yourself, “what the heck is Marin mama posting and making these days,” just read through this post a bit and you will gain a bit of insight into my insanity. Since I started Natural Chef school, my eyes have been opened, like literally opened! So much of what we’ve been told over the past few decades of what’s good for us, is not really good for us, and that’s why we’re seeing so much illness and disease. We’ve been brainwashed over the years that fats, salts, eggs and meat are bad for us, but in actuality our bodies need these essential whole foods. Our bodies need healthy fats, because 1/3 of our calories go …

5 on-the-go healthy snacks

Whose got their hands in the cookie jar? I believe that little cute hand in the above photo belongs to Eli, but I’ll admit that in my house, we’ve all been known to have our hands in the cookie jar, as we’re a family of snackers! Between the hours of 3:00 and 5:00 we all need a little something to nosh on, and something a bit sweet or salty tends to do the trick! Most afternoons the kids and I are running from one activity to another, so I prefer to hand them a homemade, healthy, grab-and-go snack, like one of these below bars, instead of something processed like goldfish or store-bought granola bars. I know all of my mom friends are always …

one-pan Mexican quinoa wraps

I’m SO crazy for these wraps, like totally insanely crazy for these, and I’ve been making them non-stop for the past 3 weeks. Marin mama might need to be committed! They’re honestly my new favorite lunch and/or dinner, and the bonus is that Zoe loves them as much as I do. Yay Zoe! I’m working on Eli, as he likes these wraps, and will totally eat them, but he doesn’t crave them the way Zoe and I do.  I do have to remember that he’s only 10, and his palate hasn’t totally evolved the way Zoe’s and mine has. So Eli, I’ll give you a few more years to be lukewarm to my healthy recipes! Just kidding cutie! These quinoa wraps are awesome for …

easy overnight hot quinoa and steel cut oats

Yes, I’m a bit obsessed with breakfast! It’s my absolute favorite meal of the day! I love starting out the day with an easy, tasty, hot and healthy power-filled breakfast, and this cereal fits the bill. It’s a blend of quinoa and steel-cut oats, (which in my eyes and tummy is pure perfection) that can be made the night before, (in under 6 minutes) which is even better. All you have to do come morning is turn on the stove and re-heat the cereal, easy peasy.  I love steel-cut oats and to pair them with the protein power and nutrition of quinoa, well you have yourself a yummy and healthy breakfast. This hot and healthy breakfast requires only 3 simple ingredients, quinoa, steel …

quinoa wrap with black beans, feta and avocado

So, I have to tell you that I’m totally obsessed with this wrap, like when I say obsessed, I mean I’ve had this wrap for lunch everyday this past week as well as dinner on a few occasions,  and I’m still craving it.  I’m just as obsessed with this wrap as I was when I first tried my lacinato kale salad, and for those of you that know me or have been following me for a while, you know that is my all time favorite salad ever!  I would put this wrap right up there in the same ballpark as my lacinato salad, and that’s saying a lot.

roasted sweet potato and farro salad

Ok, so I start my new job this week as the Director of Catering for Paradise Foods.  I’m going to be in charge of growing and running the catering division for all 3 stores.  It’s a huge job to undertake and I’m a bit nervous as it’s a bit like starting a new business, but I’m good at sales and I love working with people and food, so to me it’s a match made in heaven.  BTW, I’ll be working most of the time out of the Tiburon store, so if any of you see me, please say hi!  So, since I’m going to be working outside of the home, I’ve been looking for some new healthy lunch alternatives to …

It’s the day after Halloween and I don’t know about you, but I’m in the mood for some healthier fare today.  When I need to detox from too many sweets, wine and pizza, I tend to gravitate towards something made with kale, whether it be a smoothie or salad.  So today I thought I would share with you my favorite kale recipes from the blog in-case you were looking to detox with some kale as well.

grilled bruschetta with heirloom tomatoes

I’m sure you’ve all seen the cover for the July/August edition of Martha Stewart Living in either a book store or your grocery store. If you’ve seen it, then you know why I just had to run out and make up this bread. I opened up my mailbox last week and saw the cover showcasing this beautiful assortment of heirloom tomatoes on top of this toasted bread. I immediately went to the grocery store, bought me some heirlooms and made this up for lunch. I have to say that I was in food heaven. This bread is crunchy on the outside but soft on the inside from the juicy heirlooms and olive oil. The crunchy sea salt and fresh basil …

hot quinoa and oat cereal with goji berries

Move over grape nuts, there’s a new cereal in town. Seriously, this is by far my newest cereal obsession.  I mean I’m literally OBSESSED!  I’m now substituting my regimented daily bowl of grape nuts for this warm and comforting cereal. This is a big deal folks because I have been eating grape nuts since I was 17.  Yes, it’s the honest to goodness truth, I kid you not. I explain more about my cereal habit/obsession in this old, what I ate last week post.  I’m really just a creature of habit, especially when it comes to my breakfast routine.  I’m a carb junkie and always have been.  I need carbs to get me going in the morning, and eggs or pancakes …

Happy Mothers Day to all you mothers out there!   I got a head start on Mothers Day yesterday as Eli made me this wonderful bouquet at the farmers market, and I got to see Zoe perform in her jazz band concert.  Here’s Zoe practicing before her concert. I got to sit and watch with my 2 favorite guys!  Then we had an amazing authentic Mexican lunch at El Huarache Loco. We capped it off with ice cream at Three Twins. Then it was off to Eli’s baseball game. After his game, we walked down to Yankee Pier and had a wonderful family dinner outside. I had this salmon burger below.  Yum! All in all it was a perfect family day. …
